Honored winegrower
Ioannis Sofoulis
For the vintage 2020 of the "Primordial Soils", honored winegrower is the Ioannis Sofoulis and the selection of grapes was done exclusively from his vineyard, with manual harvesting in the early morning hours. His vineyard has a northern exposure, is located at a high altitude, with acidic, medium-textured, poor, deep, gravelly and shale soils.
This producer, whose connection to the succession of generations of viticulture is lost in the depths of time and history, continues the tradition by remaining in the strongholds of viticulture, together with his children and grandchildren. «I feel a great honor and moral satisfaction for the recognition of the efforts of all the producer members of the Cooperative, as well as the ancestral cultivation that began with my great-grandfather and will reach my grandchildren and great-grandchildren» emphasized Mr. Sofoulis on the occasion of the release of this wine, which, as he stated, comes from a vineyard «forest planted» at an altitude of 1000 meters from «wild and aromatic muscat», from the oldest vines on the island.

The color of this wonderful dry white wine, called "Primordial Soils", is light orange. Crystal clear nose with aromas of ripe apricots, roasted almonds, caramel, citrus fruits in the form of confit, with a background of honey and honeycomb.
The first mouthfeel is unexpectedly sweet and mellow, however this sensation quickly subsides in favor of a robust, tannic whole with volume and structure and an extremely long aromatic aftertaste. Very good fruit that perfectly dresses the dry to bone-dry character of the wine, harmonious.
The muscat aroma comes out at the end of the aftertaste with masterful way as an indirect olfaction (retro olfaction), of exceptional duration.

DESCRIPTION
It is a dry white wine PGI Aegean Sea, which has matured for 12 months in oval vessels and was bottled unfiltered-unfined, with an alcoholic strength of 13.5 vol and reducing sugars of 1.8 gr lt.
Ideally, the we serve in temperature 8-10ο C and deliciously accompanies all fatty fish in high culinary art forms and meats of traditional Greek cuisine. Also, special recipes such as: marinated salmon with sweet paprika and caramelized onion, as well as pasta with mushrooms, asparagus and truffle oil.
